RECIPES: Leftover turkey (or chicken) and bean tacos
Things have been a lot leaner in the GF household this month. I'm on that boring health bender the New Year inspires, but better for it. Something that will put me back on track after the festive splurge to my life-long "healthy but a little of what you fancy" diet that has served my waistline and appetite for good food reasonably well so far.
Mr GF is also training for some bonkers hill marathon so I've been keeping a keen eye on his lean protein too.
Anyway, if you're just trying to rein it in a bit or need a protein fix, then these are a really tasty, colourful and healthy dinner option. And there ain't nothing boring about that.
Serves 2-3
Ingredients
1 Tablespoon olive oil
1 Onion, chopped
1 Red pepper, chopped
2-3 handfuls of shredded leftover turkey or chicken (or pork even)
1 Garlic clove, finely chopped
1 Fresh chilli, finely chopped
2 Teaspoons smoked paprika
1 Teaspoon ground cumin
1 Teaspoon dried oregano
1 Tablespoon concentrated tomato puree

400g tin black, kidney or mixed beans, rinsed

To serve

Heat oil in a large non-stick frying pan over medium-low heat. Add the onion and red pepper and saute until soft, about 3-4 minutes. Add turkey, garlic, chilli, spices and herbs and stir, cooking for a couple of minutes. Add the tomato puree and beans and cook for 5 minutes, until warmed through. Season to taste.
